Crepe Batter
- 2 Large eggs
- 1.25 c Milk
- 2 tbsp melted butter
- 1 tbsp Vanilla extract
- 1 c All purpose flour
- 1 tbsp Sugar
- pinch Salt

Prepare the Batter
1. Whisk the eggs together along with the milk, melted butter, and vanilla.
2. In a separate bowl whisk together the flour, sugar and salt.
3. Add half of the egg mixture to the dry ingredients and whisk until smooth.
4. Then add the rest of the egg mixture and whisk to incorporate.
Prepare the Crepe
1. Heat a nonstick pan on medium low heat until drops of water gently sizzle when poured into the pan.
2. Coat the pan with a little butter or nonstick spray and ladle the batter in while twirling the pan to form a uniform circular shape.
3. You want just enough batter to reach the edge so that the crepe is round but not thick.
4. Cook the crepe for 1-2 minutes per side and fill with your favorite filling.
5. Mine’s strawberry jam or Nutella!
