- 2 c Tomatoes, finely diced (approximately 2-3 medium sized tomatoes, you can use a can of diced tomatoes, just drain some of the liquid)
- 1 green pepper
- 0.5 Red pepper, finely chopped
- 1 Onion, medium, finely chopped
- 2 clove Garlic, minced
- 1 Italian parsley
- 1 t Fresh mint, finely chopped
- 0.5 t Salt
- 0.25 t ground pepper
- 0.25 t Paprika
- 0.125 t Cayenne pepper
- 3 T Tomato paste
- 1 lb ground beef or lamb
- 12 uncooked flour tortilla

Mixing the ingredients
1. Mix all the above ingredients together minus the uncooked tortilla to create a paste.
2. Using your hands, spread a thin layer of paste on each of the tortillas.
3. Try to go as far to the ends as you can, leaving a tiny border.
Baking the tortillas
1. Bake in the oven at 425 degrees for 15-17 minutes, until the edges get a little brown.
2. Enjoy.
