- 1 quart Heavy cream
- 1 Vanilla bean, cut down the middle
- 1 tsp Vanilla extract
- 0.5 cup Sugar, plus more for topping
- 6 Large egg yolks

Directions

Preparation of Cream and Vanilla Mixture
1. In a medium saucepan over medium heat, add your heavy cream, vanilla bean, and vanilla extract.
2. Bring this up to a simmer, then cover with a lid and remove from heat.
3. Let this steep for at least 30 minutes, but preferably for 4 hours.
Mixing Egg Yolks and Sugar
1. Mix together your egg yolks and sugar in a large bowl.
2. Slowly add your cream mixture a little at a time while mixing it quickly. This is tempering the eggs.
Preparation for Baking
1. Preheat your oven to 325.
2. Add your cream and egg mixture back to the saucepan and bring to a simmer.
3. Let simmer for at least 5-7 minutes.
Baking Process
1. Add your mixture to ramekins and place in a large baking dish with some boiling water around them.
2. Place in the oven and bake for 45 minutes.
3. After 45 minutes, let cool on the counter for 1 hour then transfer to the fridge for 4 hours before serving.
Serving Instructions
1. When you're ready to serve, put a layer of sugar on top.
2. Using a kitchen torch, lightly melt the sugar together.
3. If you don't have a torch, use the top shelf of your oven and the broil setting.
4. Enjoy!
