Mashed Potatoes
- 4 lbs Yukon gold potatoes
- 2 C half and half
- 3 sprigs Thyme
- 2 sticks Butter, softened
- 0.25 C creme fraiche
- Salt, to taste
- Pepper, to taste

Preparation of Potatoes
1. Peel potatoes and cut into 1.5-2 inch chunks.
2. Add to a pot of water and bring to a boil until the potatoes are tender and a fork can be pressed through them with little resistance.
Preparation of Half and Half Mixture
1. While the potatoes are boiling, add the half and half, and thyme to a sauce pan and heat over medium low heat until warm and fragrant (about 5 minutes), and then remove the thyme sprigs.
Straining and Drying Potatoes
1. When the potatoes are ready, strain them and let them sit in the strainer for a couple of minutes to dry.
Mashing Potatoes
1. Add the potatoes to a large bowl with the butter and mash with a potato masher or whisk.
Adding Half and Half Mixture
1. Add the half and half about ½ C at a time, stirring in between until you achieve the desired consistency.
Final Touches
1. Add the creme fraiche and season to taste.
