- Romaine lettuce, chopped
- 2 Chicken breasts, boneless and skinless
- 0.5 c arrowroot flour
- 2 Eggs, beaten
- 1 c cassava flour
- 0.25 c Honey
- 2 tbsp Hot sauce
- 0.5 c Parmesan cheese, grated
- crispy garlic Parmesan chickpea croutons
Caesar Dressing
- 2 Eggs
- 1 c Olive oil
- 0.5 c Parmesan cheese, grated
- 4 anchovies
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- salt and pepper, to taste

Prepare the Caesar dressing
1. Blend 2 eggs, 1 cup olive oil, 1/2 cup grated Parmesan, 4 anchovies, 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce, salt, and pepper.
Prepare the chicken
1. Coat 2 chicken breasts in 1/2 cup arrowroot flour, dip in 2 beaten eggs, then coat with 1 cup cassava flour.
2. Pan-sear the chicken until cooked through.
Making the glaze
1. Mix 1/4 cup honey and 2 tablespoons hot sauce, then dip the cooked chicken for a sweet and spicy glaze.
Assemble the salad
1. Place chopped romaine, honey-hot chicken, crispy Parmesan chickpeas, and an additional 1/2 cup grated Parmesan.
2. Drizzle the Caesar dressing generously over the salad.
