- 1 Tbs Olive oil
- 1 Onion, chopped
- 3 clove Garlic, chopped
- 1 cup Red lentils
- 4 cup Chicken stock
- pinch salt and pepper
- 2 cup Chicken breast, cooked and shredded
- 0.5 cup panela cheese, diced
- 0.25 cup Cream
- 0.25 cup Cilantro leaves, washed and disinfected

1. Heat the oil in a large pot and add the onion and garlic; cook for a few minutes or until the onion turns translucent. Add the lentils, chicken stock, salt and pepper. Bring to a boil and simmer for 20 minutes or until the lentils soften. Transfer everything to the blender and carefully blend until you get a creamy and homogenous texture. Serve the cream hot with shredded chicken, panela cheese, cream and cilantro leaves.

1. Be careful when blending hot liquids, they can jump out and cause an accident. Leave the lid of the blender lightly open and cover with a kitchen cloth to prevent this.
