Corned Beef Roast
- 3 lb corned beef roast
- 4 c beef broth
- 2 c Dry red wine
- 2 c dark Irish beer
- 2 tsp Colman’s Mustard Powder
- 2 tbsp Onion powder
- Black pepper, to taste
- Salt, to taste
- 2 Bay leaves
- 1 Onion, quartered
- 2 Carrots, diced
- 4 clove Garlic, smashed
- Colmans mustard

Instant Pot Cooking
1. Set a trivet in the bottom of the instant pot, add the meat on top of it.
2. Add in the onions, carrots, garlic cloves and all seasonings.
3. Add in the liquids until the meat is fully covered.
4. Cover the instant pot, and turn the knob to seal and cook on high pressure for 90 minutes.
5. Vent the instant pot, and remove the meat and the trivet.
6. Set aside meat to rest.
7. Add cabbage to instant pot, and cook for 5 minutes.
8. When the cabbage is cooked, slice the corned beef against the grain.
9. Serve with cabbage and a spicy mustard.
Stovetop Cooking
1. Add everything to a pot, and bring liquid to a boil.
2. Simmer for 90 minutes per pound or until the meat is fork tender.
3. Add in vegetables during the last half hour of cooking.
Crock-Pot Cooking
1. Add everything to your crock pot, and cook on low for 10-12 hours.
