Ingredients

Flourless Chocolate Cake
- 0.5 c Unsalted butter, 113g
- 200 g Dark chocolate, good quality, chopped
- 4 Eggs
- 100 g Sugar, can add up to 125g based on preference for sweetness
- 30 g Cocoa powder
- 0.5 tsp Salt
- 1 tsp espresso powder
Chocolate Sauce
- 60 g Butter, 4tbsp
- 60 g dark or semi sweet chocolate
- 1 Egg
- 20 g Sugar
- 30 g Cream, 2tbsp

Directions

1. Preheat oven to 375F and line a 9” cake pan with parchment paper and butter.
2. For the cake, melt butter and chocolate in the microwave in 20s increments.
3. In the meanwhile, whisk the eggs and sugar for 5-7 min until thick, ribbony and light in color.
4. Pour the butter & chocolate mix into the egg mix and fold together.
5. Sift in the cocoa powder and salt and fold gently. Then pour in the coffee and fold.
6. Pour the batter into the pan and bake for 20-25 min until a toothpick comes out with moist crumbs attached.
7. While the cake is baking, prep the sauce. Melt butter and chocolate, whisk egg and sugar, and mix the two batters similar to the cake. Pour into a nonstick pan and gently heat over medium-low heat until the mix thickens. Add the cream and cook until you get a sauce like consistency (it will thicken more as it cools).
8. Transfer cake to a cake stand and pour over the sauce.
9. Enjoy as is or with vanilla ice cream.
