- 1 lb Chicken breast
- 1 tsp pink Himalayan Salt
- 1 tsp coarse black pepper
- 5 oz Spring Mix
- 3 celery ribs
- 0.75 c Red bell pepper, chopped
- 1 can Mandarine oranges
- 0.333 c Carrots, shredded
- 1 Avocado, sliced
- 0.25 c Extra virgin olive oil
- 0.25 c White wine vinegar
- 4 tsp Granulated sugar
- 3 tsp toasted sesame oil
- 4 tsp gluten free soy sauce
- 3 tsp Garlic, minced

Preparation of Chicken
1. Preheat grill on medium heat.
2. On a large cutting board slice chicken in half horizontally.
3. In a small bowl mix together salt and pepper and evenly pour over chicken breast.
4. Grill chicken evenly on both sides until internal temperature of chicken reaches 165 degrees.
5. Remove the chicken from the grill, slice evenly, cover with aluminum foil and set aside.
Dressing Preparation
1. In a small bowl mix together dressing ingredients and set aside.
Salad Preparation
1. In a large bowl add, spring mix, carrots, red bell pepper, celery, almond slices, and mandarin oranges.
2. Toss well.
3. Top with sliced avocado, grilled chicken breast, and dressing.
