Main Dish
- 1 c Red lentils, thoroughly washed
- 1 Onion, chopped
- 2 clove Garlic, chopped
- 2 tbsp Tomato paste
- 2 Carrots, peeled and chopped
- 1 Potato, peeled and chopped
- 1 tsp Cumin
- 0.5 tsp Turmeric
- 0.25 tsp Chili flakes, optional
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 2 tbsp Olive oil
- water, as needed
- 1 c Parsley, chopped
- 1 Lemon, sliced into wedges

Preparation of Ingredients
1. Heat olive oil in a pot over medium-high heat.
2. Add the onion and salt, and roast until translucent.
3. Add garlic, tomato paste, and chili.
4. Roast for another minute.
Cooking the Soup
1. Add carrots, potatoes, lentils, and spices.
2. Cover with water.
3. Cook on medium heat until the veggies and lentils are soft (around 20 minutes).
Blending and Final Touches
1. Now it’s time to blend, either with an immersion blender or in a regular blender.
2. If you use a regular one, let it cool first for a bit (unless you have a Thermomix).
3. Adjust and add more water as needed to reach your desired consistency.
4. Garnish with parsley, olive oil, lemon juice, and fresh pepper.
5. Enjoy!
