Ingredients

- 1 c Brown sugar
- 3 tbsp Ground cinnamon
- 3 tbsp quick-rising yeast
- 180 ml warm whole milk
- 0.333 c Granulated sugar
- 60 gr melted butter
- 2 Eggs
- 1 Egg yolk
- 3 c all-purpose flour
- 1 tsp Salt
- 60 gr softened butter
Icing
- 120 gr Unsalted butter, softened
- 2 oz Cream cheese, room temperature
- 1 c Powdered sugar
- 2 tsp Vanilla extract
- 1 tbsp Lime juice

Directions

For the Cinnamon Roll Dough
1. In a medium bowl, combine brown sugar and cinnamon for the filling and set aside for later.
2. In a separate large bowl (or the bowl of a stand mixer), add yeast, warm milk, and sugar and mix.
3. After 5 minutes, when the yeast has risen, add melted butter and eggs and beat together until combined.
4. Then add flour one cup at a time while folding in with a spatula or kneading with an electric mixer.
5. Knead by hand over a floured surface until forming a nice and sticky ball or use the dough hook on your mixer and mix at medium speed for 8 minutes.
6. If the dough is too sticky, add a tablespoon of flour at a time.
7. Spray a large bowl with oil and transfer the dough ball.
8. Cover with plastic and place in a warm place to allow the dough to rise for 1.5 hours or until it doubles in size.
For the Cinnamon Roll Filling and Baking
1. After the rising process, punch the dough to remove the air and roll it into a 13x9 rectangle (about the size of a quarter sheet pan).
2. Spread softened butter using a spatula and sprinkle the cinnamon sugar on top, creating an even layer.
3. Then press down using the palms of your hands.
4. Roll the dough into a tight cylinder and cut into 1-inch thick rolls — you should get around 8-9 rolls in total.
5. Place in a greased baking pan or on a lined baking tray, cover with plastic wrap, and rise again for 40 minutes.
6. Preheat oven to 350F and bake for 22 minutes or until golden brown.
For the Cream Cheese Frosting
1. In the meantime, place butter and cream cheese in the bowl of an electric mixer and cream together at medium speed for 2 minutes, until fluffy and combined.
2. Bring the speed down to low and sift in powdered sugar 1/4 cup at a time until incorporated.
3. Then increase speed to medium-high and beat for 6-8 minutes until soft.
4. Then slow the speed again, pour vanilla extract and lime juice, and beat for a minute until incorporated.
5. After removing the cinnamon rolls from the oven, wait 5 minutes and spread the frosting generously over the cinnamon rolls and enjoy!
6. Save any remaining frosting in the fridge.
