- 2 lb lamb chops
- 1.5 tsp Salt
- 4 clove Garlic
- 2 tbsp Rosemary
- 1 tsp Thyme
- 0.5 tsp Black pepper
- 3 tbsp Olive oil
Cilantro Chimichurri
- 2 clove Garlic
- 2 c Cilantro
- 0.5 c Parsley
- 1 tsp Salt
- 0.5 tsp Red pepper flakes
- 0.25 tsp Black pepper
- 1 Shallot, small
- 3 tbsp Red wine vinegar
- 0.5 c Olive oil

1. In a food processor, blend garlic, rosemary, thyme, salt, black pepper, and olive oil until a coarse paste forms.
2. Slather the marinade onto your rack of lamb or lamb chops. Cover and refrigerate for at least 2 hours but for best results, marinate overnight.
3. Bring lamb chops to room temperature for 30 mins.
4. In a hot pan, add some oil and sear the lamb chops for 4-6 mins on each side for medium-rare. Remove from pan and allow to rest for 10 minutes.
5. In a food processor, add garlic, cilantro, parsley, salt, red pepper flakes, shallot, black pepper, and red wine vinegar. Pulse until combined.
6. Add olive oil to your chimichurri mixture and stir to combine.
7. Drizzle chimichurri on your lamb and enjoy.
