- 0.5 cup Parmesan cheese, grated
- 2 bunch black kale
- 0.5 cup Pine nuts
- 0.5 cup pomegranate seeds
- 0.33333333333333331 cup currents
- 1 Cucumber, diced
- 4 bunches
- 0.5 cup Olive oil, or grape seed oil
- 0.25 cup Rice vinegar
- 1 Tbs Honey
- 0.5 lemon juiced
- Salt, to taste
- Pepper, to taste
Tortilla Chips
- 4 Corn tortillas, cut into small triangles
- 1 Tbs Olive oil

1. Preheat oven to 375F degrees. Line baking sheet with parchment paper.
2. Cut tortillas into small triangles. Place on baking sheet and drizzle/toss with olive oil.
3. Bake for 15 minutes, flip half way. Remove from oven and salt.
4. Add all salad ingredients to a bowl. Mix together.
5. Add all dressing ingredients to a measuring cup. Mix together. Drizzle salad dressing over salad. Mix together.
6. Serve with tortilla chips and enjoy!
