Ingredients

- 1 Romaine lettuce, large head, finely chopped
- 2 c Red cabbage, finely chopped
- 2 Tomatoes, large vine-ripe, diced
- 3 Persian cucumbers, finely chopped
- 1 green pepper
- 5 Radishes, diced
- 2 Green onions, chopped
- 0.25 c Fresh parsley, chopped
Dressing
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 clove Garlic, pressed
- 1 tsp Sumac
- 1 tsp pomegranate molasses
- 0.5 tsp dried mint
- 0.5 tsp Salt
- Black pepper, freshly cracked to taste
Fried Pita Bread
- 2 double ply pita bread
- 0.25 c Olive oil
- 2 tsp Sumac

Directions

Make the Dressing
1. Whisk together the lemon juice, garlic, sumac, pomegranate molasses, dried mint, salt and pepper.
2. Slowly stream in olive oil, whisking continuously until emulsified.
3. Set aside.
Fry the Pita Bread
1. In a large skillet, heat olive oil on medium heat.
2. Add the pita bread and season with salt and pepper.
3. Cook stirring frequently until the pita bread becomes crispy and golden in color, about 5-7 minutes.
4. Set aside.
Prepare the Salad
1. Place the lettuce, tomatoes, cucumbers, green peppers, radishes, green onions and parsley in a large serving bowl.
2. Pour the dressing on top and toss to combine.
Final Steps
1. Add the fried pita bread to the salad immediately before serving.
