Ingredients

- 1 c Unsalted butter, room temperature
- 2 tsp vanilla
- 1 c Cane sugar
- 1 Egg
- 3 Egg yolks
- 3 c Corn starch
- 1 tsp Baking powder
- 2 c Flour
- cookie butter
- Powdered sugar, for dusting

Directions

Preparation
1. Preheat oven to 350.
2. In a large bowl, cream butter, vanilla, and sugar by beating at medium-low speed until airy and fluffy.
3. Continue beating at low speed and add the egg and yolks one at a time until incorporated.
4. In a separate bowl, combine all the dry ingredients (corn starch, baking powder, and flour) using a whisk.
5. Use the paddle attachment of your stand mixer if you have one (or using a wooden spatula like I did) and continue to beat the creamed mixture at low speed, and slowly begin to add in the dry ingredients.
6. Once a smooth dough forms, dust flour onto a clean surface and begin to roll the dough into a ball.
7. Place in between two pieces of parchment and roll out until achieving a thickness of about 1-1.5 inches.
8. Remove the top layer of parchment and use a cookie cutter to cut the cookies.
9. Remove excess dough and roll out again to make more cookies.
10. Place on a baking sheet lined with parchment (re-use the one you were using to roll the dough) and bake for 10 minutes.
11. These cookies DO NOT get golden brown; they should remain almost the same color throughout. Otherwise, they’ll look and taste burnt.
12. Remove from oven and place over a cooling rack for 30 minutes.
13. With the help of a piping bag, add about a tablespoon of dulce de leche and sandwich together by placing another cookie on top.
14. Dust with powdered sugar.
