- 2 lb Chicken breast
Chicken Marinade
- 0.25 cup Olive oil
- 1 Tbs Lime juice, fresh squeezed
- 2 tsp Kosher salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Cumin
- 1 tsp Paprika, smoked
- 0.5 tsp Cayenne pepper
- 0.5 tsp Chili powder
- 3 clove Garlic, minced
Onions & Peppers
- 1 Red onion
- 1 Red bell pepper
- 1 Yellow bell pepper
- 1 Tbs Olive oil
- 1 tsp Kosher salt

1. Clean and pat dry chicken breast, then slice into thin strips.
2. For marinade, in a bowl combine olive oil, lime juice, salt, black pepper, garlic powder, cumin, smoked paprika, cayenne pepper, chili powder, and minced garlic. Fully coat chicken breast with marinade and refrigerate for at least 1 hour.
3. Slice red onion, green bell pepper, red bell pepper, and yellow bell pepper. Then, toss in olive oil and salt.
4. Preheat the oven to 425 F.
5. Place chicken and onions & peppers on a lined baking sheet. Bake for 20-25 minutes or until chicken is cooked and onions & peppers are tender.
