- 2 lbs Chicken thighs, boneless
- 4 tbsp Olive oil
- salt and pepper, to taste
- 1 tsp Paprika, smoked
- 2 Carrots, medium
- 1 White onion, large, chopped
- 3 celery sticks
- 5 clove Garlic, crushed
- 2 tbsp Tomato paste
- 30 oz Chicken stock
- 1 tsp Turmeric
- 1 tsp Dried oregano
- 1 tsp Dried basil
- 1 Bay leaf, dried
- 12 oz Baby potatoes, quartered
- 1 c peas
- 2 tbsp Corn starch, for slurry
- Parsley, fresh, chopped

Directions

Seasoning the Chicken
1. Season the chicken with salt, pepper, and smoked paprika.
2. In a crock pot, heat oil over medium-high heat.
3. Place the chicken and let it get crispy on both sides.
4. Transfer to a plate.
Preparing the Vegetables and Stock
1. Add onion to the pot and keep stirring until onions begin to soften, about 4-5 minutes.
2. Stir and scrape to loosen browned bits.
3. Then add garlic and cook for 30 seconds, stirring constantly.
4. Now add carrots and celery.
5. Stir for a minute.
6. Then add chicken stock and bring it to a boil.
Adding the Chicken and Spices
1. Place the chicken back in the pot along with tomato paste, turmeric, bay leaf, oregano, and basil.
2. Cover and cook for 20 minutes.
Adding the Potatoes
1. Slice the potatoes and add that to the pot.
2. Cook for another 20 minutes.
Thickening the Stew
1. In a small bowl, whisk together corn starch and water.
2. Now add that to the dutch oven.
3. Cook for 10 minutes.
Final Steps
1. Discard the bay leaf.
2. Finally add the peas and cook for 3-4 minutes and turn off the heat.
3. Stir in some parsley and enjoy it with fresh out of the oven corn bread!
