- 1 lb crawfish
- 1 tbsp Shallots
- 2 Thai chilis
- 2 tbsp Garlic
- 0.5 stick Butter, or more
- 1 tbsp Cajun seasoning
- 2 tbsp Hot sauce
- 0.5 c fresh Thai Basil
- 1 Lime, zested
- 1 Lime, juiced
- 2 tbsp fresh ground lemongrass

Cleaning and Cooking the Crawfish
1. Clean the crawfish in salt and water. Do this 4-5 times until the water is clear.
2. Cook the crawfish in a pot of boiling water for about 3 minutes.
3. Once cooked, drain them, rinse and put to the side.
Preparing the Sauce
1. On medium low heat, mix all of the fresh ingredients for the sauce in a pan.
Combining and Serving
1. Once the sauce is cooked well, add the crawfish and more fresh Thai Basil if you'd like.
2. Turn off the heat and mix well for about 1-2 minutes.
3. Serve fresh and enjoy.
Storing and Reheating
1. You can store this in your fridge for 2-3 days. If you do reheat, make sure you do so on the stove top. Try to avoid reheating in the microwave.
