Chicken Preparation
- 1 Chicken breast, split in half, cut into fourths and pounded thin
- 2 Eggs, whisked
- 2 c Milk
- 0.5 c pickle juice
- 1 c Ap flour
- 0.5 tbsp Kosher salt
- 1 tbsp Paprika
- 0.5 tbsp Black pepper
- 1 tbsp Onion powder
- 0.5 tbsp MSG
- 4 brioche buns

Preparation of Chicken
1. Preheat your oil to 350 F.
2. While your oil is heating slice chicken breast in 1/4ths.
3. Pound thin using a mallet.
4. Soak your chicken in the milk and pickle juice for 30 minutes.
5. Place flour in a bowl and season with salt, MSG, paprika, onion powder and pepper.
6. Coat chicken cutlets with flour, egg and the flour again.
7. Shake off excess flour.
8. Carefully place 3 coated chicken cutlets into hot oil and cook for 8-12 minutes until golden brown and internal temperature reaches 165F.
9. Remove from oil and repeat until all chicken is cooked.
10. Season with salt and pepper again once it is removed from hot oil.
11. Drain on a wire rack.
Assembling the Sandwich
1. Toast your brioche bun.
2. Place chicken on the bun, add pickles and your favorite sauce.
3. Enjoy!
