- 1 tbsp Olive oil
- 2 tbsp Butter
- 2 tsp Garlic, minced
- 2 tbsp Flour
- 1 c Milk
- 0.5 tsp Salt, to taste
- 0.5 tsp Pepper, to taste
- 0.5 tsp Chili flakes, to taste
- 0.5 tsp Thyme, to taste
- 0.75 c Cheese, shredded, mozzarella and cheddar
- 0.75 c frozen veggies
- 0.75 c chicken
- 2 puff pastry sheets
- egg wash

1. Preheat oven to 400F.
2. Heat oil and butter in a nonstick pan over medium heat, and add garlic. Sauté until it’s fragrant.
3. Add flour and cook for 30-60 seconds. Then add milk and mix together.
4. Add the spices and cook for a couple minutes until a thick sauce forms.
5. Add cheese and mix in. Then add veggies and chicken. Mix together and take off the heat.
6. When the mix cools down a bit, start assembly (make sure puff pastry is well chilled). Place the smaller pastry sheet on a baking pan with parchment paper. Spoon the filling on top, leaving about 1/2 inch empty around the edges. Cover with the larger sheet and pinch together the edges to enclose the filling.
7. Use a sharp knife to make a pattern on top. I made the classic pithivier pattern but you can play around with it!
8. Cover with egg wash generously and then bake for 25-30 min until deep golden.
9. Serve while it’s hot and enjoy!!
