Main Dish
- 1 lb ground chicken
- 1 c Thai basil
- 5 clove Garlic, minced
- 1 Shallot, small dice
- 7 Thai chilis
- 1 tsp Sugar
- 1 tbsp Oyster sauce
- Fish sauce, to taste
- 2 Eggs, fried

Preparation of Aromatics
1. Mince the garlic and Thai chilis.
2. Dice the shallot.
3. Put all in a bowl and set aside.
Frying the Eggs
1. Heat a pan on medium high heat.
2. Fry the eggs until they get crispy edges.
3. Baste the top of the eggs with the hot oil as they cook.
4. Set the eggs aside.
Cooking the Chicken
1. Using the residual oil, sauté the garlic, shallots, and Thai chilis on medium high heat until the shallots are slightly translucent.
2. Add the ground chicken and mix so the aromatics don’t burn.
3. Season the chicken with sugar, oyster sauce, and fish sauce.
4. Taste to adjust seasoning if necessary.
5. Continue to stir fry until the chicken is cooked through, approximately 3-5 minutes.
6. Add the Thai basil and cook for another 30 seconds until the basil has slightly wilted.
Serving the Dish
1. Serve warm with a side of white rice and the crispy fried egg.
