Tortellini Recipe
- 1 lb Three Cheese Tortellini
- 4 tbsp Butter
- 4 oz Pancetta, or bacon
- 1.5 c Heavy cream
- Salt, to taste
- Pepper, to taste
- Fior di Latte Mozzarella
- Parmigiano

Boiling the water and preparing the sauce
1. Boil some water in a pot and make sure to generously salt.
2. Melt the butter and add the pancetta to a saucepan.
3. Cook at medium heat until brown.
4. Once the pancetta is starting to look crispy, slowly add the heavy cream and stir.
5. Add salt and pepper and let the sauce to simmer for 5 minutes at medium-low heat while keeping an eye on it and stirring frequently.
Cooking the tortellini and finalizing the sauce
1. Cook the tortellini following the instructions on the package, but undercook by 1-2 minutes — they will finish cooking in the sauce.
2. Add the mozzarella to the sauce and allow it to melt while the pasta cooks.
3. Once the tortellini are ready and drained (save some pasta water just in case) toss in the sauce and simmer for two more minutes.
4. Make sure the pasta is evenly coated in the cheese sauce, add pasta water as needed water in case it’s too dry.
5. Serve on a plate and sprinkle some Parmigiano on top.
6. Enjoy!
