Ingredients

Shredded Chicken Preparation
- 1 lb Chicken breast
- 1 can Chicken Broth
- 1 c water, or enough to cover chicken breast completely in insta pot
- 1 tsp pink Himalayan salt
- 1 tsp Black pepper, coarse
Taquito Preparation
- 14 soft corn tortillas
- 3 tbsp avocado spray
- 1 block Cream cheese, softened
- 0.5 c Salsa, of choice
- 1.5 c Cheese, shredded, of your choice I used colby jack
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Chili powder
- 1 tsp Black pepper, coarse
- 1 tsp Paprika
Toppings
- 0.5 c Cheese, shredded
- 0.5 c guacamole
- 0.5 c Salsa, of choice
- 1 Tomato, small, diced
- 1 White onion, medium, diced
- 1 Lime, sliced
- 1.5 tbsp Cilantro, fresh, chopped

Directions

Preparing the chicken
1. In a pressure cooker, add chicken breast and season with salt and pepper.
2. Cover chicken breast with chicken broth and water until chicken is completely covered.
3. Cover with lid and cook on meat setting. If you do not have meat option cook on high for 15 minutes.
4. Make sure internal temp of chicken is 165 degrees then remove chicken from pressure cooker and place in a medium bowl.
5. In a medium bowl use your hands or two forks to shred chicken breast.
Preparing the filling and tortillas
1. Add shredded cheese, salsa, cream cheese, sour cream, and seasonings to shredded chicken. Mix well.
2. On a microwave safe plate place corn tortillas and cover with a damp paper towel. Microwave for 15 seconds or until corn tortillas are soft.
Assemble the taquitos
1. Preheat air fryer to 360 degrees.
2. Place parchment paper on air fryer rack.
3. Spray both sides of the corn tortilla with avocado spray and fill with cheesy chicken filling.
4. Continue to fill and roll until all filling is used. Spray with avocado spray and place in air fryer.
5. Check at 5 minutes and every minute after. They are done when outside is golden brown, cheese is bubbling, and ends are crunchy.
Toppings and Serving
1. Remove parchment paper topped with taquitos and place on a large cutting board or charcuterie board.
2. Sprinkle shredded cheese, scoop on guacamole, salsa, sprinkle on tomatoes, onions, and cilantro. Place limes around the taquitos.
