- 1.5 c all-purpose flour
- 0.5 c Cornmeal
- 1 tsp Salt
- 0.25 tsp Paprika, or cayenne pepper
- 1 c Unsalted butter, cold and diced
- 1 c cheddar
- 2 jalapeños
- 0.5 c red pepper jelly

Prepare the Dough
1. In a food processor, combine flour, cornmeal, salt, and paprika.
2. Then add the butter and pulse a few times until it resembles coarse crumbs.
3. Add the cheddar and jalapeños and pulse until the dough comes together somewhat.
4. Dump out onto a lightly floured work surface and knead a few times by hand to form it into a ball.
5. Cut into four equal pieces and then shape each piece into a log.
6. Wrap each tightly with plastic wrap and chill for at least 30 minutes or overnight.
Bake the Crackers
1. Preheat oven to 375°F.
2. Line two baking sheets with parchment paper.
3. Unwrap each log and use a sharp knife to cut into 1/4-inch slices.
4. Place close together onto baking sheets and bake until lightly golden brown, 18 to 20 minutes.
5. Remove from oven and allow to cool completely to firm up.
6. Serve with pepper jelly or your favorite jam.
7. Enjoy!
