Directions

Preparing the Strawberries
1. After your strawberries are cleaned, cut the tops and chop them into quarters.
2. Put the chopped strawberries in a large bowl then add the lemon juice and sugar.
3. Toss the strawberry sugar mixture around until mixed.
4. Cover and let the strawberry mixture sit on the countertop for one hour to draw out the water from the strawberries. This process is called maceration.
Cooking the Strawberry Mixture
1. After the maceration process is done, in a large pot over medium-high heat add the strawberry mixture into the pot and bring to a boil.
2. Using a potato masher or something similar, smash the strawberries in the pot as much as you can to break them down.
3. Similar to a roux, stir and continue to stir until the mixture gets thick and dark red with no foam. This process should take anywhere from 25-35 minutes.
4. DO NOT let the mixture burn or you will have to start over.
Cooling and Storing the Strawberry Mixture
1. Take the mixture off of the heat and let it cool or pour it into a plastic or aluminum/metal bowl under some ice.
2. Once completely cooled, you can store it in an airtight jar, refrigerate and serve.
