Ingredients

- 2 bunches broccolini
- 1 bunch cilantro
- 1 bunch basil
- 1 bunch mint
- 2 Scallions
- 2 Thai chilies
- 2 clove Garlic
- 1 Lime, juiced
- 0.5 c Red wine vinegar
- 0.5 c Extra virgin olive oil
- 1 tbsp Fish sauce
- 0.5 tbsp White pepper
- 0.5 tbsp Black pepper
- Salt, to taste

Directions

1. This recipe can be done either in a pestle and mortar or food processor. If done in a food processor, simply throw all ingredients into the food processor until a fine consistency is achieved. Steps for the pestle and mortar are listed below.
2. Start by roughly chopping cilantro, basil, mint, scallions, and chiles to make processing them easier later on.
3. Add garlic to the pestle and mortar with a pinch of coarse salt and process into a paste.
4. Add Thai chilies and process, followed by scallion, then herbs.
5. Add lime juice, red wine vinegar, extra virgin olive oil, fish sauce, white and black pepper, and mix.
6. Taste for seasoning and adjust salt levels if needed.
7. Over high heat, get a wide pan with a little bit of oil to its smoke point and add broccolini.
8. Once charred, flip, and repeat.
9. Once done, turn off the heat and add desired amounts of chimichurri and toss to coat.
