Wet Ingredients
- 1 c applesauce
- 2 flax eggs
- 0.667 c date syrup
- 0.5 c plant milk
- 1 tbsp Apple cider vinegar
- 1 tsp Vanilla extract
- 1 tsp almond extract
Dry Ingredients
- 2.25 c oat flour
- 1 c Almond flour
- 1 c Pistachios, ground (You can blend from whole pistachios)
- 2 tsp Baking powder
- 0.5 tsp Baking soda
- 0.25 tsp Salt
- 1.5 tsp Cardamom
- 0.5 c Pistachios, whole or roughly chopped
Date Glaze
- 4 dates
- 0.5 c water
- 0.5 tsp vanilla

1. Preheat oven to 350.
2. Line a 9” pan with parchment paper.
Combine the Dry Ingredients
1. To a mixing bowl add oat flour, almond flour, ground pistachios, baking powder, baking soda, salt, and cardamom.
2. Mix to combine.
Combine Wet Ingredients
1. In a separate bowl combine applesauce, date syrup, flax eggs, apple cider vinegar, vanilla extract, and almond extract.
2. Mix to combine.
Combine Wet and Dry Ingredients
1. Pour the wet ingredients into the dry ingredients and mix to combine.
Get Ready to Bake
1. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Prepare the Glaze
1. Combine ingredients in a blender and blend until smooth.
Finish the Cake
1. Allow to cool on the rack.
2. Add glaze and chopped pistachios.
