Pasta
- 8 oz pappardelle
- 5 oz Oyster mushrooms
- 5 oz brown mushrooms
- 2 clove Garlic
- 2 tbsp Italian chili paste
- 2 Lemons, juiced
- Lemon, zest of 1 organic
- 1 c Parsley, chopped
- 1 tbsp Olive oil
- 0.5 Salt, or to taste
- 0.5 tsp Pepper, or to taste
Garnish
- 0.5 c Basil leaves
- 0.25 tsp cracked pepper
- 0.5 tbsp Olive oil
- 0.25 c Nutritional yeast, Use it instead of cheese to make it vegan

Directions

Preparation of Ingredients
1. Slice the mushrooms and crush the garlic.
Roasting Garlic and Mushrooms
1. In a pan, heat olive oil over medium-high heat and roast garlic together with the chili paste for 1 minute.
2. Add the mushrooms and sauté until fully cooked.
3. Add lemon juice to the mushrooms.
Preparing Pasta
1. In the meantime, boil your pasta al dente and save about 1 cup of the salted cooking water.
Combining Ingredients
1. Add the cooking water together with the boiled pasta, the chopped parsley, more lemon juice, and lemon zest to the pan.
2. Toss until well combined.
Garnishing
1. Garnish with your choice of cheese, basil leaves, and cracked pepper.
