- 6 beef short ribs
- salt and pepper
- 2 Tbsp Olive oil
- 3 Tbsp Tomato paste
- 2.5 cups Dry red wine, I use Cabernet Sauvignon or a Merlot will do. Don’t get any expensive wine. This should only cost about $10
- 2 Cartons beef stock, 64 oz
- 6 Sprigs Fresh thyme

Preparing the Beef
1. Sprinkle beef generously with salt and pepper. (Make sure you drizzle oil on the beef so the salt and pepper sticks)
2. Heat oil in a large pot over medium high heat.
3. Add half the short ribs and brown aggressively all over.
4. Remove and repeat with remaining short ribs, then remove.
5. Turn heat down to medium.
6. Add onion and garlic into the same pot and cook for 2 minutes.
Adding the Vegetables and Seasonings
1. Add the diced carrots and celery and cook for 5 minutes until carrots are softened.
2. Add tomato paste and cook for 1 minute.
3. Add wine, broth, thyme and bay leaves.
4. Stir until tomato paste is dissolved.
Final Cooking Steps
1. Return short ribs into liquid, arranging them so they are submerged or mostly submerged.
2. Cover with lid for 3 hours, or until the meat can easily be pried apart with forks.
Seasoning and Serving
1. Season with a sprinkle of salt and pepper if needed - Note: It's ok to salt your protein after it's cooked.
