- 3 large leeks
- 2 tbsp Butter
- 2 clove Garlic, crushed
- 0.25 c White wine
- 0.5 c Chicken Broth
- 0.5 c Parmesan cheese, grated

Preparing the leeks
1. Slice the leeks into half-inch circles, up to the leafy part.
2. Soak them in cold water for 10-15 minutes to clean.
3. Drain and pat dry.
Making the leek ash
1. Use a torch or broil the leek leaves until charred to make the leek ash.
2. Set aside.
Cooking the leeks
1. In a pan, melt the butter over high heat.
2. Sear the leek slices on both sides until slightly browned.
3. Add crushed garlic, white wine, and chicken broth to the pan.
4. Reduce heat to a simmer and cover.
5. Cook for about 15-20 minutes, or until leeks are tender.
Preparing the Parmesan crisps
1. Meanwhile, preheat the oven to 350°F (175°C).
2. On a baking sheet lined with parchment paper, form small mounds of grated Parmesan cheese.
3. Bake for 5-7 minutes until golden and crisp.
Serving the dish
1. Once the leeks are tender, plate them and sprinkle with leek ash.
2. Garnish with Parmesan crisps.
3. Serve and enjoy.
