Ingredients

Tilapia Fillets
- 3 tilapia fillets
- salt and pepper
- 2 tbsp Cornstarch
Toppings
- 1 Roma tomato
- 1 large shallot
- 0.5 head garlic
- 1.5 c picked mustard greens
- Cooking oil
- 1.5 c water
- 1.5 tbsp Fish sauce
- 0.5 tsp Sugar

Directions

Preparation of Tilapia Fillets
1. Salt and pepper your tilapia fillets.
2. Coat them with the cornstarch and set aside.
3. In a pan over medium high heat, add enough oil to coat the bottom of the pan to shallow fry.
4. Once hot, fry your tilapia 3 minutes per side until golden yellow.
5. Remove and set aside.
Sautéing the Vegetables
1. In the same pan over medium high heat, add your shallots and sauté for 1 minute.
2. Add your garlic and sauté for 30 seconds.
3. Add your tomatoes and sauté for another minute.
4. Add your pickled mustard greens and cook for another minute.
Combining and Simmering
1. Add back your 3 fried tilapia fillets and 1.5 cups of water.
2. Season with 1.5 tbsp fish sauce and 1/2 tsp sugar.
3. Gently combine so the fish is mixed well with the vegetables and sauce.
4. Reduce the heat and simmer for 20 minutes.
Serving
1. Serve hot with rice.
