Ingredients

- 50 gr Basil leaves, fresh
- 3 tbsp Pine nuts
- 1 c pecorino romano
- 1.5 c Parmigiano reggiano
- 2 clove Garlic
- 0.5 c Extra virgin olive oil
- 1 tsp Coarse sea salt
- 1 lb Pasta
- 1 burrata, fresh

Directions

1. Fill a large pot with salted water and boil.
2. In a food processor, combine basil, pine nuts, pecorino, parmigiano, EVOO, and salt at high speed until forming a puree.
3. Cook pasta until al dente, save a cup of pasta water, and drain.
4. Place drained pasta back into pot and pour pesto sauce on top, mix until fully combined.
5. Add pasta water, as necessary, until reaching the perfect consistency.
6. Serve on a plate, grate more pecorino on top, and garnish with a fresh burrata.
