- 1 tbsp Olive oil
- 3 oz Pancetta
- 0.25 Red onion, sliced fine
- 0.5 c Cream
- 0.5 c stracciatella
- 0.5 c parmigiano
- salt and pepper, to taste
- pepper sauce
- 1 tbsp Parsley, minced
- edible pansies
- 8 oz gnocchi

1. Add Olive Oil & Cook pancetta until crispy (about 10 mins for larger pieces).
2. Transfer crispy pancetta to a paper towel until ready to add back to sauce.
3. Add Red onion & simmer until soft & translucent, about 3 minutes.
4. Pour in cream & let simmer until thickened, another 3 minutes.
5. Add both cheeses, salt & pepper and mix into sauce.
6. Let sauce simmer for about 2-3 minutes until cheese is nice & melty.
7. Add gnocchi & gently mix into sauce until fully submerged.
8. Lightly drizzle with pepper sauce.
9. Sprinkle crispy pancetta & parsley.
10. Top with edible pansies & Enjoy!
