- 2 c Flour
- 1.5 tsp Baking powder
- 0.5 tsp Baking soda
- 1 tbsp vanilla jello pudding
- 0.5 tsp Kosher salt
- 0.5 c Butter, unsalted, melted
- 2 Eggs
- 0.5 c Milk
- 2 tsp Vanilla extract
- 0.75 c Brown sugar
- 0.25 c Granulated sugar
- 2 c Blueberries, extra for top

Directions

Preparation
1. Preheat your oven to 375° F.
2. In a medium-sized bowl, add melted butter, eggs, milk, vanilla extract, brown sugar, and granulated sugar.
3. Use a whisk to whisk together until combined.
4. In a separate bowl, mix together your dry ingredients: flour, baking powder, baking soda, salt, and jello pudding.
5. Once that is combined, slowly add in your dry ingredients to your wet ingredients and whisk together until combined. Do not over whisk, just until all the lumps disappear.
6. Next, fold in your rinsed and dried blueberries gently. Try not to mix too hard so they don't pop.
7. To a lined and greased muffin tin, add your batter.
8. Place a few extra blueberries on top as well as some turbinado sugar.
9. Bake in the oven for 20 to 25 minutes until a toothpick comes out clean.
10. Once your muffins are browned, you can add more sugar to the top and let them cool before serving.
11. Enjoy with your favorite breakfast drink!
