Ingredients

Muffin Batter
- 0.25 c Vegetable oil
- 4 tbsp Unsalted butter
- 1 c Sugar
- 1 large egg white
- 0.5 c Buttermilk
- 1.5 tsp Vanilla extract
- 1.75 c Flour
- 1 tbsp Corn starch
- 2 tsp Baking powder
- 0.5 tsp Salt
- 1.5 c fresh blueberries
Filling
- 8 oz Cream cheese
- 0.333 c Sugar
- 0.5 tsp Vanilla extract
Topping
- 0.25 c Flour
- 0.25 c Brown sugar
- 0.25 tsp Salt
- 2 tbsp Unsalted butter, melted

Directions

Preparation
1. Preheat oven to 375.
Make the Batter
1. Mix together oil & melted butter for batter, add sugar & eggs and mix.
2. Then add buttermilk and vanilla and mix.
3. In a separate bowl combine all the dry ingredients for the batter.
4. Mix the dry ingredients into the wet ingredients.
Make the Filling
1. Whisk together the cream cheese, sugar & vanilla.
2. Beat until smooth.
Make the Topping
1. Mix together the flour, brown rice sugar, salt.
2. Stream in the melted butter while mixing until a chunky topping forms. Don't over mix.
Layer and Bake
1. Layer in muffin tray, batter, cream cheese filling, batter on top, then topping.
2. Bake for 25-28 minutes. These will deflate a small amount due to the cream cheese filling, that’s normal!
3. Wait a few minutes to cool before serving as the filling will be hot.
