Ingredients

Yi Mein/E-Fu Noodles
- 10 ounces Yi Mein/E-Fu Noodles
- 0.25 tsp Salt
- 1 tbsp Soy sauce
- 1 tbsp Dark soy sauce
- 2 tbsp Oyster sauce
- 1 tbsp Sesame oil
- 2 tsp White pepper
- 4 tbsp Vegetable oil
- 6 clove Garlic, minced
- 8 shiitake mushroom
- 10 ounces Chives, 2-inch long pieces, light and dark parts separated

Directions

Preparing the Noodles
1. Boil a large pot of water and cook the Yi Mein noodles for roughly 2 minutes, making sure that they are not fully cooked.
2. Drain and rinse with cold water.
Preparing the Sauce
1. In a bowl, mix together the soy sauces, oyster sauce, sesame oil, salt, and white pepper.
Cooking the Ingredients
1. Heat a pan or wok to medium-high and add the vegetable oil and minced garlic, cook for 1 minute.
2. Add the mushrooms and the light green parts of the chives, and stir fry for another minute.
Combining and Cooking
1. Add the noodles and cook for a minute until the noodles are hot.
2. Pour in the mixed sauce and stir fry everything together for another minute. Add more oil if necessary.
3. Add in the remaining green parts of the chives, mix and cook for another 2 minutes.
