Pork Spare Ribs
- 1 lb pork spare ribs
- 1 tbsp Cornstarch
- 1 tbsp Shaoxing wine
- 1 tsp Light soy sauce
- 0.5 tsp Salt
- 1 tsp Sugar
- 0.25 tsp White pepper
- 1 tbsp Ginger, minced
- 1 tbsp Garlic, minced
- 1 tbsp fermented black beans
- 2 tbsp Cornstarch
- drizzle Sesame oil
- 2-3 red chili peppers

Preparation of ribs
1. Cut the ribs into bite-sized pieces and transfer to a mixing bowl.
2. Add Shaoxing wine, soy sauce, sugar, salt, and white pepper. Mix well.
3. Toss in ginger, garlic, and fermented black beans. Mix again.
4. Finally, add the cornstarch. Mix well until the ribs are well-coated.
5. Let them marinate for at least 30 minutes or overnight for more flavor.
Before steaming
1. Drizzle sesame oil on top and add red chilis.
2. Place the marinated ribs in a heatproof dish or a shallow plate suitable for steaming.
3. Make sure the ribs are spread out to ensure even cooking.
Steaming and serving
1. Cover and steam them over high heat for about 15-20 minutes or until the ribs are fully cooked.
2. To check for doneness, pierce a rib with a fork; it should be tender and no longer pink in the center.
3. Serve the steamed spare ribs hot.
