Ingredients

Main Ingredients
- 2 lbs beef shank, brisket, chuck roast
- 6 ginger slices
- 2 tbsp Oil
- 1 Small onion
- 4 clove Garlic
- 2 Scallions
- 4 Thai chili peppers
- 3 tbsp Shaoxing wine
- 3 tbsp Light soy sauce
- 1 tbsp Dark soy sauce
- 1 tbsp chili bean paste
- 8 rock sugar
- 1 Tomato, or 1 tbsp tomato paste
- 1 spice bag
- 8 c boiled water
- fresh thin or thick white noodles
- Chinese choy sum, bok choy, or any of your fav greens

- 1 cinnamon stick
- 2 Star anise
- 1 black cardamom
- 1 dried tangerine peel
- 2 licorice root slices
- 1 tsp Fennel seeds
- 1 tsp Coriander seeds
- 1 tsp Sichuan peppercorns

Directions

Preparing the Beef
1. Cut the beef shank into small chunks and add them to a large pot of cold water along with 3 slices of ginger.
2. Bring it to a boil, drain the water, and rinse the beef with running water.
Preparing the Broth
1. In the same pot, heat oil over medium heat.
2. Add onion, the remaining 3 sliced ginger, garlic, scallion whites, and Thai chili peppers (if using).
3. Cook for 1 minute until fragrant.
4. Add the blanched beef and cook for a few minutes until slightly browned.
5. Season with Shaoxing wine, light soy sauce, dark soy sauce, chili bean paste, and rock sugar.
6. Mix well.
7. Add the tomato and spice bag.
8. Pour in about 8 cups of boiled water to cover the beef.
9. Bring everything to a boil, then reduce the heat to low.
10. Cover and let it simmer for 3 hours.
Preparing the Noodles and Serving
1. Cook the noodles in boiled water for 1 minute, then add the choy sum and cook for another minute.
2. Place noodles in a bowl, add in the broth, beef, choy sum, and garnish with chili oil, scallions, and cilantro.
