Ingredients

- 1 c Avocado oil, for frying
- 12 chicken drumsticks
- 1 tbsp Healthy Rican Adobo
- 2 tsp Healthy Rican Sazón
- 1 tbsp Healthy Rican Sofrito
- 3 green plantains
Mayo-Ketchup
- 0.5 c Mayonnaise
- 0.5 c Ketchup
- 1 Garlic clove, minced
- 1 tbsp Hot sauce

Directions

For the chicken
1. Season the chicken with the adobo, sazón and sofrito.
2. Allow to marinate for as long as desired, or overnight in the refrigerator.
3. Pre-heat the oven to 400° degrees.
4. Add the chicken to a baking sheet and cover with aluminum foil.
5. Bake covered for 35 minutes.
6. Remove the cover and bake for an extra 10 minutes.
For the plantains
1. Peel the plantains using a knife and under water.
2. Chop into 1 inch pieces.
3. Fry in the avocado oil on medium/hot heat for 2-3 minutes on each side.
4. Remove from heat.
5. Using 2 flat surfaces, flatten the plantain pieces and fry again until golden brown on each side.
6. Remove from heat and add to a plate with paper towels to remove excess oil.
7. Sprinkle with adobo while they are still hot.
For the Mayo-Ketchup
1. In a small bowl, mix all the ingredients together and enjoy as a dipping sauce for your tostones.
