Sushi Rice
- 1 c sushi rice
- 1 tbsp Rice vinegar
- 0.5 tbsp Sesame oil
- 1 tbsp Mirin
- 1 tsp Salt
- Cooking spray
- 1 hass avocado
- Lime juice
- flakey salt

Sushi Waffle Directions
1. In a large bowl, combine cooked sushi rice with rice vinegar, sesame oil, mirin, and salt. Mix to coat rice evenly.
2. Heat a small waffle maker and grease with cooking spray.
3. Fill the waffle maker with half of the rice mixture, and cook in the waffle maker until golden brown and crispy.
4. Repeat with the other half of rice and set the rice waffles aside.
Avocado Rose Preparation
1. Cut your avocado in half and remove the pit.
2. Peel off the skin and place it on a cutting tray face down.
3. Slice the avocado into thin slices and fan out the avocado, forming a long line.
4. Carefully roll starting from one end and curl the slices towards the center, forming a rose.
5. Using a spatula, lift the rose and place it on top of the waffle.
6. You can squeeze some lemon juice, drizzle extra virgin olive oil (EVOO), and sprinkle some seasoning.
7. Enjoy!
