Ingredients

Chicken and Vegetables
- 1 lb Chicken thighs, diced 1” cubes
- 1.5 tbsp Healthy Rican Savory Spice Mix
- 2 tbsp Oil, for cooking (I used aceite de achiote)
- 0.25 c White onion, diced
- 0.25 c Bell peppers, diced
- 0.25 c culantro or cilantro
- 1 tsp Garlic, minced
- 2 tbsp Spanish olives
Rice and Broth
- 1 lb jasmine rice
- 32 oz Chicken Broth, preferably low-sodium
- 1 tsp Healthy Rican Sofrito
- 1 tsp Healthy Rican Sazón
Peas and Carrots
- 1 small can peas & carrots

Directions

Marinating the chicken
1. Marinate the chicken with savory spice mix or adobo.
Preparing the pan
1. In a large pan, on high heat, add the oil, diced onions, peppers, ½ of the culantro/cilantro and garlic.
Adding the chicken
1. Add the chicken, mix well, cover and allow to cook for 5 minutes.
2. Turn and cook a bit more as needed (perhaps 5 more minutes if you are unsure). Ideally the chicken will be almost completely cooked. It will finish cooking with the rice.
Adding the rest of the ingredients
1. Add the olives if using, and the rice.
2. Top the rice with chicken broth. Approximately ¼ inch above the rice.
3. Add seasonings, diced vegetables, cover and cook until the liquid comes to a boil.
Final steps
1. Once the liquid has mostly evaporated, give it a quick mix, add the remaining culantro/cilantro on top, cover and cook on low heat for 15-20 minutes, or until the rice is completely cooked and fluffy.
