Graham Cracker Crust
- 2 c Graham Cracker Crumbs
- 4 TBSP Butter, melted
- 3 TBSP Sugar
Cheesecake Batter
- 20 oz Cream cheese, softened
- 1 c Sugar
- 2 Eggs
- 0.25 c Sour cream
- 2 TBSP Flour
- 2 tsp Vanilla extract
Apple Pie Filling
- 6 medium apples
- 0.333 c Brown sugar
- 3 TBSP water
- 4 TBSP Butter
- 2 tsp Cinnamon
- 2 TBSP water, + 1tbsp cornstarch
- 1 tsp Vanilla extract
- 1 pre-made pie crust

Prepare the apple filling
1. Dice the apples.
2. In a pot, melt the butter and cinnamon, then add in the apples, brown sugar, and water.
3. Stir and cover, cook for about 5 minutes, stirring occasionally.
4. Add in the cornstarch slurry and cook until apples are soft.
5. Remove from heat and stir in vanilla extract.
Prepare the crust
1. Preheat the oven to 425
2. In a bowl, mix together the graham cracker crumbs, melted butter, and sugar.
3. Line the bottom and sides of a 9-inch springform pan with the crumbs.
4. Bake for 6 minutes.
5. Lower the temperature to 350.
Prepare the cheesecake batter
1. Beat together the cream cheese and sugar until combined.
2. Blend in the eggs one by one until creamy.
3. Add in the vanilla extract, sour cream, and flour.
4. Stir until smooth.
Assemble and bake the cheesecake
1. Pour half of the cheesecake batter into the crust and bake for about 20 minutes until the top is settled.
2. Remove from oven and top the cheesecake with a thin layer of apple filling, then the remaining cheesecake batter.
3. Bake for 40 to 45 minutes.
Final steps
1. Remove from oven and top with remaining apple pie filling.
2. Cut the pie crust into 1-inch strips and weave a lattice pattern.
3. Brush with egg wash, raise the temperature to 450, and bake for 30 minutes until the crust starts to brown.
