Ingredients

- 2 lb Honey Crisp apples
- 0.33333333333333331 cup Light brown sugar
- 0.25 cup White sugar
- 1.5 tsp Cinnamon
- 0.5 tsp Nutmeg
- 1 tsp Vanilla extract
- 0.25 cup Unsalted butter
- 1 Lemon, juiced
Cornstarch Slurry
- 4 tsp Cornstarch
- 4 tsp Water
Oat Topping
- 0.75 cup whole rolled oats
- 1 cup Light brown sugar, for the crumble
- 0.75 cup All purpose flour, for the crumble
- 1 tsp Cinnamon, for the crumble
- 0.5 cup Unsalted butter, diced and kept chilled for the crumble

Directions

1. Preheat the oven to 350F.
2. Dice 6 apples into desired shapes. In a mixing bowl, toss apples in lemon juice.
3. In a cooking pan on medium heat, add butter and melt. Next, add in apples. Combine brown sugar, white sugar, cinnamon and nutmeg, then add over top of the apple and combine. Then mix in vanilla extract. Bring apples to a simmer and let the apples simmer for about 5 minutes or until they become soft.
4. Reduce heat, combine cornstarch & water to form cornstarch slurry, then add into pan and continuously stir. Once sauce and apples have thickened, remove from heat and allow to cool.
5. In a mixing bowl, combine oats, brown sugar, flour, cinnamon and cold butter. Use your hands or chopping utensil and bring ingredients together to form a dough. Once the topping is formed, break it apart into crumbles.
6. Place cooked apples into an 8x8 inch baking dish or 8 inch cast iron skillet. Then, add oat topping crumbles on top of apples. Bake for 20 minutes. Periodically check to make sure it is not overflowing.
7. Let cool for 10 minutes before eating, then enjoy!
8. Optional, add ice cream and/or caramel.
