Ingredients

Curry Ingredients
- 1 tbsp Oil
- 1 Red onion, cut into chunks
- 1 medium potato
- 2 Large carrots, cut into 1” chunks
- 2-3 curry blocks
- 2.5 cups water
- 0.25 tsp Ground black pepper
- 1 pinch Salt
- Black sesame seeds, for garnish
- dried parsley
Katsu Ingredients
- 2 boneless pork loin chops
- 1 Egg, beaten
- 0.333 cup Flour, mixed with a pinch of salt and a pinch of black pepper
- 1 cup panko crumbs
- Oil spray

Directions

Prepare the Katsu
1. Preheat air fryer to 375°F.
2. Place the beaten eggs, flour, and Panko crumbs in 3 separate shallow bowls.
3. First coat a pork loin chop with flour, then dip it in the beaten eggs, and lastly cover it with Panko crumbs on all sides. Make sure everything is evenly coated.
4. Repeat the above steps with the second pork loin.
5. Generously spray both sides of the prepared pork loin chops with cooking oil.
6. Place the pork loin chops in the air fryer in a single layer. Air fry for 25 minutes, flipping once after the first 15 minutes.
Cook the curry
1. Heat 1 tablespoon of oil in a deep pot over medium heat. Once the oil is hot, add the onion chunks and cook for about 2 minutes.
2. Add the potato and carrot chunks. Cook for another 3-4 minutes.
3. Add salt and pepper.
4. Add 2.5-3 cups of water and bring it to a boil.
5. Add in the curry blocks and mix until they are completely dissolved.
6. Cover with a lid and let it simmer on low heat for 10-15 minutes until the soup starts to thicken. Stir occasionally to prevent sticking.
Assemble the dish
1. Serve the curry over some white rice, then place the cooked pork katsu either on top of the curry or on the side. Garnish with some black sesame seeds or dried parsley.
