- 4 Russet potatoes, cooked
- 1 tbsp Olive oil
- 0.5 tsp Garlic powder
- 0.25 tsp Salt
- 0.25 tsp Black pepper
- 0.5 block Cabot Extra Sharp White Cheddar Cheese
- Sour cream, for topping
- Green onions, sliced for topping
- sundried tomatoes

1. Preheat an air fryer to 380ºF.
2. Slice the potatoes in half lengthwise and scoop out some of the potato flesh to create a crevice. Save the scooped potatoes for another use.
3. Brush the olive oil all over the potatoes and season with garlic powder, salt, and pepper.
4. Transfer the potato skins to the air fryer and cook until the skin becomes crisp, 10-12 minutes.
5. Add shredded cheese inside the potato skins and continue cooking until the cheese melts, about 2 more minutes.
6. Top the potato skins with sour cream and green onions and any other desired toppings.
