Ingredients

- 4 banana or plantain
- 8 spring roll wrappers
- 0.25 c granulated monk fruit
- 0.5 tbsp Cinnamon
- Canola oil, for brushing
Salted Caramel Sauce
- 0.5 c raw brown sugar
- 0.75 c Coconut milk, from a can
- 0.25 tsp Salt, optional

Directions

1. In a small pot, add the brown sugar and heat for 1 minute over medium-high heat.
2. Use full-fat canned coconut milk and use only the thick white part, save the clear coconut liquid for another recipe or smoothie.
3. Add the thick white coconut milk to the pot and stir until everything is well combined.
4. Bring to a boil, lower the heat and let it simmer for 15 minutes, stirring frequently.
5. If you want the caramel to be salted, add the salt and mix evenly before turning off the heat.
6. Let the sauce cool down for 10 minutes then transfer to a jar, set aside to continue to cool.
7. Peel and cut the banana into 3 - 3 1/2 inch long pieces, try to find the straight sections as much as you can, the straighter they are the easier it'd be to roll later.
8. In a wide bowl, mix together the sugar and cinnamon.
9. Roll the banana slices in the mixture to thinly coat them.
10. Place the banana on one corner of the spring roll wrapper, start rolling towards the center and form a "triangle".
11. Then fold both corners inward and press them onto the roll, continue to roll until you reach the other end.
12. Wet the end with a little bit of water to seal them better.
13. Repeat to finish all the rolls.
14. Brush a thin layer of oil on the rolls.
15. Place onto the air frying tray.
16. Air fry at 400°F for 5 minutes, flip them, and fry for another 5 minutes or until they're golden all around.
17. Drizzle on the caramel sauce or serve the sauce as a dip.

Notes
1. Please be careful the rolls will be extremely hot when they're just out of the air fryer.
2. You can store the rest of the caramel sauce in a jar in the fridge for a week, it will get even thicker when it's refrigerated but you can warm it up before use again.
