Soup Ingredients
- acorn winter squash
- 1 head of garlic
- 2 medium onions
- Salt, to taste
- Pepper, to taste
- 0.25 c Olive oil
- 1 c Chicken Broth
- 1 tbsp Butter
- 1 tbsp Pumpkin seeds
- dash Thyme leaves
- coconut or heavy cream
- 0.333 Baguette, for homemade croutons

Preparation of Vegetables
1. Find a medium size winter squash.
2. Cut it in half and remove the seeds.
3. Slice the onions with the peel on.
4. Place squash, onions, garlic on the baking sheet and generously add olive oil, salt and pepper.
5. Bake it on 450F for 30 minutes.
6. Flip the veggies for even roasting.
Blending and Seasoning
1. Once fork tender, scoop the squash into the blender.
2. Remove the skin of the onions.
3. Squeeze the garlic and add it to blender.
4. Sprinkle a little more salt and pepper and pour some hot chicken broth for smooth texture and flavor.
5. You can also add half a cup of cream at this point if you prefer your soup to be a bit more creamier.
Serving the Soup
1. Gently pour the soup in a bowl.
2. Now sauté pumpkin seeds in butter.
3. Add a spoonful for topping and homemade croutons for crunch.
4. Feel free to drizzle some cream.
