Pork Belly and White Beans
- 4 oz pork belly
- 0.5 Onion, diced
- 3 clove Garlic
- 1 can white beans
- 3 tbsp Olive oil
- 0.5 c cotija cheese
- Salt, Kosher
- Black pepper, coarse
- 1 tsp Cumin
- 3 Radishes, thinly sliced
- 0.25 c pickled onions
- 2 tbsp Chives, chopped
- tostadas

Cooking the pork belly
1. Cook pork belly until crispy.
2. Transfer to a plate and set aside.
3. Sauté onion and garlic in the same skillet until softened.
Preparing the bean mixture
1. In a food processor, combine the drained beans, sautéed onion and garlic, olive oil, 1/4 cup cotija, olive oil, cumin and a pinch of salt and pepper.
2. Blend until smooth.
3. Transfer to skillet and warm up over low heat.
Serving the dish
1. Transfer the mixture to a serving dish and top with radish, chives, pickled onion, remaining cotija cheese and the chopped up crispy pork.
2. Finish off with black pepper and serve with tostadas or chips.
3. Enjoy!
