- 1 tsp Garlic, minced
- 0.25 c Shallot, minced
- 0.5 tsp mild smoked paprika
- 2 Celery stalks, peeled and cut on a bias into 1/4-inch slices
- 1 15-ounce jar large cooked beans such as gigantes, giant lima beans, giant white beans, or butter beans
- 2 tbsp sherry vinegar
- 0.25 c fresh parsley leaves
- Kosher salt
- freshly ground black pepper

Preparation of Ingredients
1. Combine 2 tablespoons olive oil, tomato paste, garlic, and shallot in a medium skillet.
2. Heat over medium heat, stirring constantly, until fragrant and starting to bubble gently, about 2 minutes.
3. Stir in smoked paprika and cook for 30 seconds.
4. Add celery, drained beans, vinegar, and remaining olive oil.
5. Cook until barely warmed through, about 1 minute.
6. Stir in parsley, season to taste with salt and pepper.
7. Serve immediately with crusty bread.
