Chicken Salad
- 1 chicken
- 1 Lime, juiced
- 8 Thai peppers
- 0.333 tbsp Salt
- 0.333 tbsp Black peppercorns
- 1 bundle rau răm
- 0.5 Red onion, sliced

1. Pre-cook/boil your whole chicken in advance. If you don't have this, you can use a rotisserie chicken but depending on the seasoning of the rotisserie chicken, it could modify the intended flavor of the salad.
2. Shred the chicken into thin strips into a large mixing bowl.
3. In a mortar and pestle, gently crush thai peppers, salt, and whole black peppercorns until it forms a paste.
4. Squeeze lime juice into the pepper, salt and peppercorn mixture and mix well.
5. Add the sauce to the large mixing bowl with the shredded chicken.
6. Add the sliced red onion and sliced Vietnamese coriander (Rau Ram). Mix this well and taste to adjust - add more salt and lime as needed.
7. Serve either room temperature or cold. Enjoy!
